Turkey Tomato Salad with Mustard White Wine Vinaigrette

This is a recipe for a delicious salad that I enjoyed last night!  I had some turkey lunch meat that I forgot about, and some tomatoes and some BOOM!  When those three combined I ended up with this surprisingly delicious salad.  It’s more like a salad sandwich, because it has the lunch meat and the dressing with the mustard, but it’s still salady because it’s got the greens, vegetables, and the white wine in the dressing.  The white wine really adds an almost spicy note, even though I used a very sweet Riesling that astringent alcohol was present and brought a tartness that complimented the other flavors greatly!

INGREDIENTS – DRESSING

  • 1 – 2 Tbsp Olive Oil
  • 1 Tbsp White Wine Vinegar
  • 1/2 Tbsp Stoneground Mustard
  • 1/2 Tbsp White Wine (Reisling)

INGREDIENTS – SALAD

  • 1 Cup Salad Mix (I used a Baby Arugula Blend)
  • 1 Medium Roma Tomato – Roughly Chopped
  • 2-3 Slices of Low Sodium Oven Roasted Turkey – Roughly Chopped
  • 3 Tortilla Chips – Crunched
  • 1 – 2 White Mushrooms – Chopped
  • 1 Tbsp Lemon Pepper
  • 1 Tsp Salt

Mustard White Wine Vinaigrette Dressing

RECIPE – DRESSING

  1. Combine the white wine, white wine vinegar, and stone ground mustard until evenly blended
  2. Slowly whisk in the olive oil over a period of 1 minute until your dressing is emulsified

RECIPE – Salad

  1. Chop your veggies
  2. Combine veggies and salad mix in a bowl
  3. Top with turkey and tortilla chips
  4. Drizzle with dressing
  5. Salt and Pepper to taste

 

This salad was awesome and the tortilla chips added a great crunch to the dish.  There’s something almost mysterious about it that makes you want to keep taking another bite to figure out what it is(it’s the raw white wine), and that’s my favorite part.  I hope you enjoy this light salad and be sure to comment or send me your own salad ideas!
