Creamy Crunchy Mac & Cheese With Stewed Tomatoes

Growing up, I never had Easy Mac or any prepackaged Mac & Cheese, all there was was my mother’s amazing Mac & Cheese that had creamy noodles, layers of cheese, and an incredible crunchy topping.  My grandmother used to put Stewed Tomatoes on her Mac & Cheese, and it’s a flavor combination I’ve grown to love.  It’s cheesy, crunchy, gooey, then tart and savory.  My mother’s secret ingredient was using Evaporated Milk instead of heavy whipping cream or milk, I don’t really know why it’s so much better, but it is!

 

The dish was paired with an Apple Roasted Pork Tenderloin with a White Wine Apple Sauce, that I’ll have up soon!

 

Mac and Cheese with Stewed Tomatoes

INGREDIENTS

  • 2 Boxes Elbow Noodles
  • 2 – 8oz. Cans Evaporated Milk
  • 1/2 Stick Butter
  • 1 – 16 oz.Velveeta Cheese
  • 1 bag – 16 oz. Extra Sharp Cheddar Cheese, Shredded
  • 2 -3 Cups Panko Bread Crumbs
  • 2 Tbsp Mrs. Dash (you’ll need more for sprinkling between layers)
  • 1 Tbsp Black Pepper
  • 1 Tbsp Salt
  • 2 – 80z. Can Stewed Tomatoes

RECIPE

  1. In a Large Pot bring a lot of water to a boil
  2. Add both boxes of Elbow Noodles
  3. In another large Pot combine Velveeta Cheese, Evaporated Milk, and Butter
  4. Bring to a boil
  5. Reduce to a simmer (stir until Velveeta is melted)
  6. Heat oven to 375
  7. After about 10-13 minutes the Noodles will be tender, drain them
  8. Pour the noodles into a big mixing bowl, then mix in the cheese sauce
  9. Add Mrs. Dash, Pepper, and Salt
  10. You’ll need 2 Loaf Baking Dishes
  11. Make a 1/2′ layer of noodles
  12. Top that with a layer of the Extra Sharp Cheddar and 1Tsp of Mrs. Dash
  13. Repeat until the dish is almost full
  14. Mix together the bread crumbs with the cheese when you get to the top so it will have a crunchy layer
  15. Heat a pot to medium-high heat
  16. Add Stewed Tomatoes
  17. Bring to a boil
  18. Set aside
  19. Put in oven for 15 minutes
  20. Turn oven to Broil
  21. KEEP A CLOSE EYE ON YOUR MAC & CHEESE
  22. Cook 3 -5 minutes until bread crumbs and cheese are browned
  23. Remove from Oven
  24. Let stand 2 -3 minutes
