WOOT!  We keep getting more guest posts!  Today we have one hailing from Adam Latz.  I’ve known Adam for several years and he has plenty of restaurant experience.   This dish looks pretty delicious, it’s lemon roasted chicken topped with cilantro.  It’s a clean and simple dish that will make any weeknight go from dull to awesome!



  • 1 – 2 Lb Boneless Chicken Breast W/ Skin ON! (can be asked for at your butcher, or in upscale markets)
  • 1 Lemon
  • 1/2 Onion
  • 1/2 Bell Pepper
  • 1 Tbsp Fresh Cilantro
  • 2 Tsp Salt
  • 2 Tsp Black Pepper
  • 3 Tbsp Butter

  1. Preheat your oven to 375
  2. Slice the Bell Pepper into 1/2′ strips
  3. Roughly Chop the Onion
  4. Cut the Lemon in Half
  5. Put your Chicken and Veggies on a smaller baking dish
  6. Squeeze Half the Lemon over the Chicken and Veggies
  7. Cut the other half of Lemon into slices and top the Chicken with them
  8. Put your butter in a small bowl with a paper towel covering it in a microwave for about 30 seconds MAXIMUM
  9. Roast in the oven for 35 – 50 minutes until the internal temperature reaches 170 degrees
    *** Baste the chicken with the butter every 5- 7 minutes AFTER it’s been in the oven for 10 minutes ***
  10. Place 1/2 the Veggies on your plate, top with the Chicken
  11. Top the Chicken with remaining Veggies and Cilantro
