Prosciutto & Mandarin Orange Salad

This salad has amazing consistency.  The prosciutto adds a great saltiness to the dish, which pairs well with the clean bell pepper and chive flavors.  The dressing for this salad is light because it’s just an accent, the flavors of everything else in the salad are what really shine.  So enjoy!

Prosciutto & Mandarin Orange Salad

  • 1 Cup Wild Salad Mix
  • 1/4 Bell Pepper Diced
  • 1 Chive Sliced diagonally (makes it look pretty)
  • 2 Tsp Lemon Pepper
  • 1 Tsp Olive Oil
  • 2 Tsp Balsamic Vinegar
  • 2 Slices Prosciutto
  • 1 Mandarin Orange
  • 1 Slice of Monterey Jack Cheese


  1. Combine all Ingredients in a mixing bowl except the mandarin orange and the Prosciutto
  2. Heat a pan to Medium Heat
  3. Cook Prosciutto until brown and becoming hard (like crispy bacon)
  4. Crumble the Prosciutto over the salad
  5. Slice the mandarin orange slices in half and use as many pieces as you want in the salad
  6. Crumble Monterey Jack Cheese
  7. Sprinkle with Almonds, Cashews, and Macadamia Nuts (available from Planters, it’s called the “South Beach Diet Mix”)
  8. Top with Lemon Zest and Lemon Pepper (Optional)
