Mango Avocado Salad W/ Peach Apple Cider Vinaigrette

Mango Avocado Salad

This salad is a good combination of flavors and textures.  The sweetness of the mango goes well with the crunch of the lettuce and the avocado adds a protein like consistency while the tomatoes add acid that compliments the Peach Apple Cider Vinaigrette.  It’s light and full of healthy mono/polyunsaturated fats from the avocado and lycopene from the tomatoes.  So enjoy this simple and delicious salad!

INGREDIENTS

  • 1 Cup Cherry Tomatoes
  • 1 Avocado
  • 2 Medium sized mangos
  • 1/2 Head Iceberg Salad
  • 1 Tbsp Black Pepper

DRESSING INGREDIENTS

  • 2 Tbsp Apple Cider Vinegar
  • 1 Tbsp Olive Oil
  • Juice from 1 Peach Fruit Cup

RECIPE

  1. Slice the Iceberg half into Wedges and put in a medium Mixing Bowl
  2. Cut the Avocado in half, remove pit
  3. With the Avocado still in it shell, cut it into cubes then spoon it into the Mixing Bowl
  4. Peel the skin off the mangoes (mangoes have cores so cut around them)
  5. Cut Mango into cubes also, add to bowl
  6. Add the Cherry Tomatoes, you can halve them if you want
  7. Top with dressing (below) and serve, garnish with pepper and paprika

DRESSING RECIPE

  1. In a bowl mix vinegar and fruit cup juice
  2. Slowly whisk in the oil with a spoon until it looks like a good consistency up to 1Tbsp
  3. Add Black Pepper to dressing and stir to combine
