Healthy Summer Squash Smothered with Cheese

Summer Squash is a vegetable that I’ve come to learn isn’t publicly enjoyed.  I don’t know why.  It has a great flavor and texture; similar to zucchini.  It can be made healthy and light, even with cheese in the mix.  I’m here to present a way of making squash that even your kids will like. The way to keep it healthy with cheese is using the Laughing Cow Triangles of cheese.  If you’ve read any of my other recipes, you’d realize how much I love that stuff.  It’s 35 calories a square of pure joy

INGREDIENTS

  • 2 summer squash sliced into straws
  • 2 triangles of Laughing Cow Garlic and Herb Cheese
  • 1 clove garlic minced
  • ½ shallot minced
  • ½ tbsp olive oil
  • 1 tsp salt
  • 2 tsp black pepper
  • 1 tsp marjoram

RECIPE

  • Cut the top and bottom off the squash, then slice it into long flat sheets.  Cut those sheets into straws
  • Get a small pan over medium heat
  • Add the olive oil
  • Add the minced garlic and shallot, stir them around for 2 or 3 minutes
  • Turn the heat up to medium-high
  • Add the squash and seasonings
  • Stir fry for about 7 minutes, or until the squash is fork tender, and starting to brown slightly
  • Pour the squash onto paper towels and squeeze out some of the excess oil
  • Add the squash back to the pan with the cheese triangles and stir until the cheese is melted all over the squash
  • Serve

This is a good, gooey, and cheesy application of squash.  It’s low in fat and is a great side dish.  It goes well with lighter meats like chicken, turkey, or pork.  I hope this has made summer squash something you would consider adding to your diet.
