Omelet Muffins

I was wondering how baking eggs would turn out, so I sprayed a pan with some Pam and cooked and egg at 375 for 8 minutes and enjoyed a delicious baked fried egg.   That’s what led me to this recipe.

I like quiche, and I like frittatas, and I like muffins, so I thought I’d make a weird combo.  There’s a base of dried french bread topped with egg that’s mixed with ham, cheese, and fresh vegetables.  This is definitely one to impress your guests, it looks fancy and it’s really simple!


  • 4 Eggs
  • 2 Slices American Cheese
  • 2 -3 Mushrooms Sliced
  • 1/4 Cup Diced Red Onion
  • 4 -5 Slices of Ham Lunch Meat Chopped
  • 1/4 Cup Milk
  • 2 Tsp Black Pepper
  • 1 Tsp Salt
  • 1 Day Old French Bread
  • Garnish – Green Onion and Paprika


  1. Preheat oven to 375
  2. Whisk together your Eggs, Milk, Cheese, Ham, Onions, and Mushrooms
  3. Spray a Muffin Tin with Pam
  4. Chop up French Bread into tiny pieces
  5. Make a bottom layer of Bread in the Muffin Tins
  6. Fill Muffin Tins to Halfway with Egg
  7. Place in Oven for 8-13 Minutes until Eggs begin to brown on top and the bubbling slows
  8. Serve and Garnish with Paprika and Sliced Green Onions
