Cold Lobster Grapefruit Salad

This is simple, light, and fresh.  It’s healthy and elegant.  The pairing of Lobster and citrus is always a good choice.  Complimenting the these flavors is the crunchy sweetness of Bell Pepper and the Spicy Bite of Onion.


  • 1 1/2 Cups Spinach
  • 1/4 Yellow Bell Pepper
  • 1/4 Red Onion
  • 1 Grapefruit
  • 1 Tbsp Butter
  • 1 Lobster Tail
  • 2 Tsp Pepper
  • 1 Tsp Salt


  1. In a Sauce Pan Heat Water to a Boil
  2. Add Lobster Tail
  3. Cook 5-7 Minutes until Tail is Bright Red
  4. Remove and Remove Meat from Tail
  5. Chop Lobster into Bite Size Pieces
  6. Chop your Onion and Pepper into Small Cubes
  7. Bring a Small Sauce Pan to Medium Heat
  8. Add Butter
  9. Chop Grapefruit into Quarters
  10. Squeeze 3 of the Quarters into the Melting Butter and through in the Rinds
  11. Cut the Rind off the 4th Quartered piece, and slice Grapefruit into Bite Size Pieces
  12. Bring Butter Grapefruit Sauce to a Boil, and reduce to a Simmer
  13. Cook 5 Minutes and remove from heat
  14. Combine Spinach, Veggies, Lobster, and Grapefruit Pieces
  15. Pour Dressing into a bowl and throw in the freezer until cooled
  16. Top Salad with 1 Tsp Salt and 2 Tsp Black Pepper
  17. Pour Dressing on Salad, and Stir to Combine
