Vegetarian Frittata

Are you looking for a quick easy way to change up your regular breakfast routine of scrambled or fried eggs?  Well the Frittata might just be the change you’re looking for.  It’s similar to a quiche, but less pie like, you can load it with healthy veggies and it looks great on a plate too.


  • 6 Eggs
  • 1/4 Cup Low-Fat Milk
  • 5-6 Button Mushrooms Sliced
  • 1 Slice of Red Onion about 1/2′ Thick
  • 1 Whole Bell Pepper (I used Yellow)
  • 1 1/2 Cups Fresh Spinach
  • 1/2 Cup Cilantro Rough Chopped
  • 2 Tsp Salt
  • 2 Tsp Black Pepper
  • 1 Tbsp Dill
  • 1 Tbsp Butter
  • 1 Cup Mozzarella Cheese x 2


You will need an Oven Safe Pan for this, or a Baking Dish you can use on the Stove.  I used a Pie Dish on the Stove.

  1. Beat your Eggs, Add the Seasoning and Mozzarella Cheese
  2. Stir to Combine, Set Aside
  3. Turn Oven on to Broil
  4. Heat your Pie Dish to Medium High Heat with the Butter until it’s melted
  5. Add the Chopped Onion, and Bell Peppers
  6. Let Cook 2 -3 Minutes
  7. Add Mushrooms
  8. Cook another 2 -3 Minutes
  9. Add Spinach
  10. Cook until just barely Wilted
  11. Add your Eggs
  12. Stir to Combine Veggies and Egg, lower heat to medium
  13. Top With Cilantro
  14. Cook about 3 -4 Minutes or until the egg is beginning to Set on top
  15. Put the Eggs in the Oven for 3 Minutes
  16. Top with remaining Cup of Mozzarella Cheese
  17. Return to oven for another 3 Minutes or until the Cheese is beginning to Brown
  18. Pull out, let cool 5 Minutes, serve with sliced cilantro and tomato as garnish
