Silver Dollar Bison Burgers

If you haven’t had it already, Bison is an incredible animal.  It has less Saturated Fat than regular Ground Beef and it also has healthy Mono and Poly Unsaturated Fats.  It’s loaded with protein too;  it’s also more tender and juicy (in my opinion) than any ground beef.

Ingredients

  • 1 Lb Ground Bison
  • 1  1/2′ Thick Slice of Sweet Onion
  • 1 Tbsp Lemon Pepper
  • 1 Tsp Orange Zest
  • 2 Tsp Salt

RECIPE

  1. Get your Slice of Onion on the Cutting Board and Mince it into a Paste, or toss it in the Blender/Processor until a Paste
  2. Combine all your Seasonings in a Bowl
  3. Combine Onion Paste, Meat, and Seasoning in a Mixing Bowl (Mix until barely combined, you don’t want to over work the Bison and make it lose it’s texture)
  4. Form the Bison into Silver Dollar sized Meatballs
  5. Flatten them into Patties (BE SURE TO MAKE A DIVET IN THE MIDDLE OF THE BURGERS TO KEEP THEM FROM TURNING BACK INTO MEATBALLS ON THE GRILL!)
  6. Let the Patties sit for 10-15 Minutes, this will allow them to come up to Room Temperature, which will ensure even Cooking.  It will also allow the Salt to penetrate the Meat as well as the other Spices.
  7. Heat your Grill to Medium – High Heat
  8. Place all over your Burgers on the Grill
  9. Cook for 2-3 Minutes, just until they have a nice Sear on them
  10. Flip
  11. Cook 2 -3 Minutes
  12. Serve on Small Buns if you can find them, otherwise I recommend doing them open face on French Bread Slices
