Baked Parmesan Eggplant Fries

Eggplant is consider by most to be a uni-tasker, or some kind of mutant alien vegetable.  It’s actually a very versatile food that is present in several Ethnic Cooking Styles.  For Example; in Italian food it’s used in Eggplant Parmesan, or Eggplant Lasagna,  while in Asia it’s used int Stir Fries, or Breaded and Fried.  Today I’m doing it American, and we’re making some Eggplant Fries!


  • 1 Medium – Large Eggplant (American)
  • 3 Large Eggs
  • 1 Cup Panko Bread Crumbs
  • 1 Cup Parmesan Cheese
  • 2 Tbsp Salt
  • 2 Tbsp Black Pepper
  • 1 Tbsp Paprika
  • 1 Tbsp Stone Ground Brown Mustard
  • 1 Tbsp Yellow Mustard
  • 1 Tbsp Sweet Hot Mustard
  • 1 Tbsp Frank’s Hot Sauce


  1. Cut your Eggplant into Fries, then put the Fries into a Colander over a Bowl
  2. Mix the 2 Tbsp Salt all over your Eggplant
  3. Let it sit  20 – 30 Minutes
  4. Dry your Eggplant with Paper Towel and Drain the Bowl of the Purple Water
  5. Heat your Oven to 425 Degrees
  6. In a Large Bowl Combine the Eggs, Mustard, And Hot Sauce
  7. In another Bowl Combine your Seasonings, Bread Crumbs, and Parmesan
  8. Dredge your Eggplant in the Egg-wash First, then into the Bread Crumbs
  9. Set them on a Baking Pan and into the oven for 7 Minutes
  10. Flip them and Cook another 7 Minutes (OR UNTIL THE PARMESAN IS GETTING NICE AND BROWN)

  1. I can’t wait to make the low carb version of this. I think instead of bread crumbs we can use milled flaxseed. I will let you know how it goes. Great website! Doing the pork stir fry soon too!
