Orange Pineapple Chicken on a Roasted Portabello Mushroom

This recipe is inspired by the restaurant “The Counter”, where you can make customized burgers with everything from different types of meat, patties, cheeses, sauces, and sides.  My favorite thing to get there is the Turkey Burger with Havarti Cheese, Pineapple and Sauteed Mushrooms.  This is my homage to that incredible burger goodness


  • 1 Whole Skinless Boneless Chicken Breast
  • 1 Large Portabello Mushroom
  • 1 Can Sliced Pineapple Rings in Syrup
  • 2/3 Cup Orange Juice
  • 2 Tsp Sea Salt
  • 2 Tsp Black Pepper
  • 1/2 – 1 Tbsp Olive Oil


  1. Chop your Chicken into Bigger than Bite-Size Pieces
  2. Throw the Chicken in a bowl with the Pineapple, Pineapple Juice, and Orange Juice
  3. Marinate for 20-30 minutes
  4. Preheat Oven to 350 Degrees
  5. Remove the Pineapple Rings and all the Chicken
  6. Remove the stem from the Portabello and put it in the oven with 1 Tsp of water for about 15-20 Minutes
  7. Heat a Medium Size Pan to Medium High Heat
  8. Add the Oil
  9. Add the Chicken and Saute for 3 Minutes on each side
  10. Add the Juice and simmer for 5-10 minutes
  11. Remove Chicken
  12. Cut the Pineapples into small cubes and add to sauce
  13. Add Salt & Pepper
  14. Reduce by Half
  15. Remove the Mushroom from the Oven
  16. Top with Sliced Chicken
  17. Top with Pineapple and Sauce
