Bacon Beer Zucchini

One of my favorite things to do is see what I have in the kitchen and make something delicious with it.  So I bought Zucchini at the store and saw what I had around.


  • 2 Zucchini
  • 1/4 Cup Diced Red Onion
  • 2 Slices Bacon
  • 1/2 – 1 Cup Harvest Moon Pumpkin Beer
  • 1/2 – 1 Cup Chimay Beer
  • 1/2 Portabello Mushroom
  • 1 Tsp Salt
  • 2 Tsp Pepper
  • 2 Tsp Garlic Powder


  1. Heat a Skillet to Medium High Heat
  2. Add Bacon
  3. Dice the Onion
  4. Chop the Mushroom
  5. Chop the Zucchini into rounds
  6. When the Bacon is Crispy, remove half the Bacon Fat
  7. Add the Onions and Saute for about 3 – 5 Minutes, Stirring often
  8. Add the Beers and Deglaze the Pan with a Wooden Spoon (Scrape off the burnt stuff on the pan)
  9. Bring to a Boil
  10. Reduce by Half
  11. Add the Zucchini and Mushrooms
  12. Cook until Liquid is Dissolved
