This one’s a bit unorthodox, but the flavor levels are through the roof. It’s an original take on barbecue chicken.
This is a good variation of a traditional Barbecue Chicken. The sweet tea vodka and lemon juice add a bright pop of flavor to the tangy barbecue. And doing it Baked in it’s own juices just adds to the flavor character of the sauce. The same method below can be enlarged and you could make a slew of Barbecue Chicken for Sunday Football, or parties, or just about anything.
- 3 Skinless Boneless Chicken Breasts
- 3 Shots of Sweet Tea Vodka
- 2 Tbsp Lemon Juice
- 1 Cup your choice Barbecue Sauce (I used Jack Daniel’s Original)
- 1 Tbsp Garlic Minced
- 1 Tbsp Brown Sugar
- 2 Tsp Salt
- 1 Tbsp Black Pepper
- 2 Tbsp Paprika
- 2 Tsp Rosemary
- 1 Small Handful Craisins
- Mix all the wet ingredients together, and the brown sugar in a sauce pan over medium heat
- Bring your Chicken to Room Temperature
- cook until sugar melts.
- Put sauce in freezer until at room temperature
- Combine Sauce and Chicken and let them sit in the fridge for at least 30 minutes
- After 30 minutes, set your oven to 350 degrees
- Put the chicken and sauce AND ROSEMARY in a baking dish
- Put the chicken in for 30 minutes
- Remove chicken and slice into thin slices, while pouring the sauce into a sauce pan.
- With any luck the sauce is a lot thinner now. It’s at this point that you add another half cup of Barbecue Sauce.
- Heat oven to 375
- Pour sauce back into pan
- Add Craisins
- Bring the sauce to a boil
- Cover and turn to medium heat
- Put the slices of Chicken back in the Baking Dish
- Cover Chicken with the Dry Seasonings
- Return to oven for 10 more minutes at 375
- Pour sauce back on the chicken and let it sit for about 5 minutes to remarry
- and Enjoy!
