Open Face Eggs Benedict Sandwiches

I love Eggs Benedict, but sometimes you don’t just have English Muffins, Canadian Bacon, and five or six egg yolks for the sauce laying around. This recipe’s another homage to my favorite breakfast, and using many items that can be found around the kitchen. It’s delicious and looks like it took a long time, but it’s just easy and great!

This one’s real easy and real tasty.  It’ll make you feel like you’ve earned your breakfast, and we all know it’s not true.  You just woke up silly!  But seriously, it’s not on the healthier side of the menu, and is really filling.  And EXACTLY what you’ll want to eat every day of your life until you’re 40 lbs. overweight.  Once again, hooray for late 90’s camera phones!  Enjoy!


  • 1 Amarosso Hoagie Roll – Cut in Half and Toasted
  • 3 Slices of Deli shaved Smoked Ham
  • 3 Slices of Deli Shaved Rotisserie Chicken
  • 1 Roma Tomato
  • 1 Tbsp Cream Cheese
  • 1 Tbsp Garden Vegetable Cream Cheese
  • 2 Triangles of Laughing Cow Garlic and Herb Cheese
  • 1 Tsp Butter
  • 1 Tsp Dill
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 2 Eggs
  • 2 Tsp Apple Cider Vinegar


  1. Cut the Hoagie Roll in half and toast
  2. Put the Lunch meat on the Hoagie
  3. Heat a small pot of water to a boil (Add vinegar and a pinch of salt), when you’ve hit boiling lower to medium heat and maintain a simmer
  4. in another small pot melt the butter over medium heat
  5. Add the 3 cheeses to the melted butter and break down with a wooden spoon until melted
  6. Add Dill, Salt, Pepper to cheese mixture
  7. Break eggs into simmering water and poach for 4-5 minutes, flipping once when it rises to the top (I cook them 1 at a time to avoid over crowding, or you can just use a bigger pot and more vinegar)
  8. Slice Roma Tomato
  9. Put Tomato on top of Meat on Toast
  10. Place an egg on each piece of toast
  11. Top the length of both slices with the sauce
  12. Sprinkle with a little Parsley, Dill, Cayenne, or Paprika, whatever you want to use as a garnish

I made this up in about 20 minutes and enjoyed it thoroughly.  It’s part breakfast, part lunch, it’s rich and filling.  If you want you can slice them in half and share with a friend.  I ate it myself though, because anything with a sauce and eggs is my favorite.  If I had Canadian bacon I would’ve used it, but the lunch meats worked quite well.  You could also dice up some bell pepper to use as a garnish.
